Update Image API diagram in How it Works page

https://iiif.io/get-started/how-iiif-works/ refers to a diagram from Image API 1.0, which was replaced by 2.0 more than 7 years ago.

Would be good to use a more up to date one!

I think the URL structure is still valid for 3.0 though isn't it?

Structure yes, but it uses grey not gray in the diagram, which we "fixed" in 2.0 to use the American spelling :)
