<h2>Ingrédients</h2>

<p>Biscuit</p>

<li>5 blancs d'oeuf</li>
<li>5 jaunes d'oeuf</li>
<li>45 g cacao en poudre</li>
<li>1 trait de citron</li>
</ul>

<li>350 g de chocolat</li>
<li>35 cl de crême liquide</li>
</ul>
<h2>Préparation</h2>
<ol>
<li>Monter les blancs en neige. Ajouter le sucre, le citron, puis les jaunes d'oeufs. Mélanger. Incorporer délicatement le cacao avec l'aide d'une spatule.</li>
<li>Etaler la pâte sur une plaque recouverte de papier cuisson en l'égalisant. Enfourner 12 min à 180 °C. Laisser refroidir.</li>
<li>Râper le chocolat. Faire bouillir la crême. Verser, hors du feu, sur le chocolat. Mélanger, lisser et laisser refroidir.</li>
<li>Verser et étaler les 3/4 de la ganache sur le biscuit. Le rouler, l'entreposer 30 min au frigo. Finir de décorer la bûche avec le reste de ganache.</li>
